These are your cupcakes and you can do whatever you want! You’re already breaking rules by consuming cereal after 9am.

Lucky Charms cupcake recipe. Not only are these cupcakes incredibly easy to make, but they also boast a fun decoration using Lucky Charms cereal! Celebrate St. Patrick's Day with a little whimsy!

Ingredients

Chocolate Cupcakes
Buttercream Frosting

Instructions

Cupcake Directions
  1. preheat oven to 350 degrees Fahrenheit
  2. take butter and eggs out of refrigerator to ensure your butter and eggs are at room temperature
  3. prepare your cupcake tin or liners
  4. sift together the dry ingredients into a bowl (flour, baking powder, cocoa powder and salt). SIFT!!
  5. in a separate bowl combine the butter and sugar until creamy
  6. add in eggs one at a time and mix until combined
  7. add milk and sour cream and mix again until smooth
  8. slowly add in dry ingredients little by little and mix until just incorporated. at this stage do not over mix
  9. divide the mix amongst your cupcake liners evenly.
Frosting Directions
  1. place butter in mixer and beat until smooth
  2. add in 1 cup of your icing sugar and mix until smooth
  3. add vanilla and 1 more cup of icing sugar and continue to mix
  4. alternate mixing in cream and the remaining sugar until the frosting is light, fluffy and creamy
  5. keep alternating and adjusting your cream and sugar until it reaches the right consistency even if you need to add additional sugar or cream
  6. once finished, spoon frosting into a piping bag
  7. pipe a mound of frosting onto the cooled cupcakes
  8. dip the cupcake upside down into a small bowl of dry Lucy Charms cereal
