Not only is this dessert incredibly delicious, but it's also remarkably easy to whip up, thanks to the magic of pre-made commercial puff pastry. Yes! Puff pastry is SO good for tarts and really gives that - I know what I’m doing with pastry WOW factor. Using pre-made puff pastry takes all the hassle out of baking and allows you to focus on the fun part – creating delicious desserts that look gorgeous! DO NOT FEEL BADLY USING PRE_MADE PUFF. Repeat that. If you’ve caught any season of Bake Off then you will already appreciate that even those advanced bakers on the show struggle with puff pastry. And so, you have my permission and the audience of baking shows to stock up your freezer with some handy ready-to-go puff pastry. Armed with a pack or two of puff pastry in your freezer, you'll always be prepared to whip up a fabulous dessert at a moment's notice. It's like having a secret weapon in your culinary arsenal, ready to impress guests and satisfy cravings alike.

Now, onto the tart itself. The beauty of using puff pastry for tarts is that it bakes up beautifully golden and flaky, providing the perfect base for all sorts of toppings. In this case, we're showcasing the sweet and juicy flavor of plums, which pair perfectly with the buttery, crispy pastry. I’ve thrown in a little almond sugar butter mix because almonds and plums are just heavenly together and I LOVE that the softness of the almond mix gives a little softness and added flavor depth to this tart. It’s also incredibly easy to mix up and add to this already quick and simple plum puff pastry recipe!

Can you make puff pastry tarts ahead of time?

You can! Although absolutely EVERYTHING is more Moorish and gorgeous and delicious straight out of the oven. BUT if you must prepare these ahead of time, yes. Yes, you can. That said moisture will be your enemy with these tarts so be sure to absolutely 100 percent make certain that the tarts have cooled completely once you take them from the oven. Then and only then you will want to pop them into an air-tight container to be sure that they stay as crispy as possible. They will still look amazing too.

Frozen Puff Pastry Plum tart advice to make you a success.

If you’re unfamiliar with working with pre-packaged frozen puff pastry then there are a few tips I’d love to share. First, be aware that store-bought puff pastry LOVES to stick to itself. There is a window of working time that exists between the time frozen puff pastry comes to the right temperature to be able to first, separate the two sheets of puff pastry. When you’re ready to make these, remove the frozen puff pastry from the freezer, remove the box, and open the paper package. At this point, you should be able to at least get the two sheets of puff pastry apart. Place each on its own piece of parchment to further separate them. After a little bit, each sheet will need to be unfolded but doing so too soon when it’s hard will break the sheets so you’ll need to feel and test when they feel soft enough to unfold without breaking. Again, and I can’t stress this enough - be sure to use parchment to make sure that each sheet can not touch the other and that your thawed sheets are flat.

That truly is the most ‘difficult’ part of this recipe.
