CAN YOU USE TOMATO SKINS IN TOMATO SOUP?

Yes, it is perfectly ok to keep the skin on your tomatoes when making tomato soup using fresh tomatoes.  Removing the skin is really only a personal preference as some people feel removing them results in a smoother soup.  However the skin is where a significant portion of the tomato’s nutrient are.  The skins provide fiber, antioxidants and vitamins.  Thus the skin adds a nutritional boost to your soup.  When you use an immersion blender or countertop blender - if you blend properly after cooking you will achieve a velvety texture without compromising the nutritional benefits.

ARE FRESH TOMATOES BETTER FOR TOMATO SOUP THAN CANNED?

The canning process involves high heat and extended storage which may result in some nutrient loss.  By making your own soup from fresh tomatoes  you have control over the cooking process thereby preserving more of the vitamins and minerals that might be compromised in canned alternatives.  You will also be avoiding preservatives.

Additionally, there simply is no substitute for the robust flavor of fresh tomatoes.  The natural sweetness and acidity of fresh tomatoes impart a depth of flavor that elevates your tomato soup to new heights.  Choosing tomatoes at the peak of ripeness ensures the best taste and nutritional content.

What are the best tomatoes to use for fresh tomato soup?

Roma tomatoes, also called plum tomatoes.  They have low moisture are firm and have a rich flavor.  They tend to produce a thicker soup and have a lower seed count.  Like Romas, San Marzano have similar attributes.  Heirloom tomatoes are also great to use and are always just a delight to look at and use.  Their quirky variations can lend a bit of complexity to a tomato soup.  You can also use enchanting vine ripened tomatoes you often see at wholesale stores such as Costco.  They are Wonderfull too.

The absolute take home message here is that no matter what - the tomatoes will taste the absolute best and make the most delicious soup if they are fully ripe.  That is where the flavor is so honestly, if you don’t have ripe tomatoes wait to make this soup.  And yes, over ripe tomatoes will be okay to use too.

NOTE:  You can also use a mix of tomatoes in your soup.  If you have more than one type of ripe tomato in your kitchen feel free to use them together.

WHAT ELSE CAN I ADD TO MY TOMATO SOUP RECIPE?

One of my favorite ways to get extra vegetables into my diet is to add in power green leaves wherever possible and soups are the perfect way to do so.  Power green leaves are simply a mix of green vegetables you can easily find as Costco or your local supermarket. These can be kale leaves, spinach, chard or any combination.  Their mild flavor does not significantly change the flavor of the tomato soup.  In this recipe I’ve added 2 cups of a mix of green leaves.  Feel free to add your favorite.

  1. preheat oven to 450 degrees
  2. wash your ripe tomatoes
  3. drizzle olive oil in the bottom of a roasting pan
  4. add tomatoes to the roasting pan and roast in oven for 35 minutes or until skin is blistered and cracked
  5. chop your onion and mince your garlic
  6. add your onion and garlic and olive oil to a sauté pan or deep casserole and sauté until translucent, approximately 2 minutes
  7. add your roasted tomatoes to the onion and garlic mixture
  8. add in your stock
  9. add in your cream
  10. add in your greens
  11. using an immersion stick blender, blend until smooth and velvety
  12. serve into bowls and garnish with fresh basil and a drizzle of olive oil

Notes

It is crucial that your tomatoes are ripe. This will achieve the best possible flavor in your soup. YES, it is okay to keep the skins - simply blend longer to smooth the consistency. The skins adds fiber and nutrition to the soup.
