QUICK WATERMELON SORBET WITH ONLY TWO INGREDIENTS AND NO SUGAR ADDED.

The natural sweetness of watermelon and bright flavor of limes create the most lovely sorbet in just a few steps. Freezing the watermelon gives you a head start toward creating the delicate icy texture of a sorbet. Honestly it’s a delight to make with its simplicity, integrity to beautiful ingredients and ultimate flavor. And did I mention it’s a bit of a show stopper? Garnish it with tiny wedges of melon or fresh sprigs of mint.

This is an incredibly forgiving recipe and one that you can totally riff on - use your unique taste preferences to adjust the level of tart citrus to balance the sweetness of the melon. It is OKAY to be imprecise with this recipe. For example, depending on the water content of your melon you may need to add a dash of water or more lime juice to get the smooth icy texture you enjoy and that is OK. OR even add a third ingredient if you wish… perhaps coconut milk or water? I’m sure whatever you decide it’ll be beautiful!

This simple, 2 ingredient sorbet tastes like a fresh bite of summer! No ice cream maker required.

Ingredients

Instructions

  1. Cube and freeze your watermelon
  2. Press or squeeze your limes
  3. Using a food process or or blender combine the two ingredients and blend until smooth. NOTE you may need to add additional juice to achieve the correct texture but do NOT add too much water or your sorbet will be too icy.
  4. Spread your soft icy mixture into a shallow pan and place in the freezer to firm. Glass or metal is fine.
  5. To serve, bring your pan out of the freezer and allow to soften for 15 minutes
  6. Scoop beautiful balls of fresh sorbet into serving dishes
  7. Garnish with a sprig of mint or small wedge of watermelon.

Notes

Remember that if you'd like to garnish with a small wedge of fresh watermelon to take the time to cut those wedges while you are cubing the watermelon. Make these petit and perfectly formed. The rest of the cubed watermelon that will be frozen does not need to be aesthetic as it will be blended.
